We all love the smell of fresh bread baking in the oven. There are very few smells as powerful as a baking of bread specially of sour dough bread. Here are 5 major points to remember next time you make your sour dough:

  1. Have a strong sourdough starter
To have a great sourdough bread you must have a great starter first.
  2. Choose the best Flour
The main difference between bread flour and all-purpose flour is protein content. Bread flour, which comes in white and whole wheat varieties, has a higher protein content than all-purpose, usually 11-13%. It’s called “bread flour” because most bread requires higher amounts of protein to produce lots of gluten. More gluten means better structure and better rise to your bread. A high percentage of protein means a harder (stronger) flour best suited to chewy, crusty breads. Less protein means a softer flour, best for chemically leavened things like pie crusts, cakes, cookies, and biscuits.
  3. Control your temperature
Treat the temperature of your environment as one of the ingredients. Most of the sourdough fales are attributed to the inconsistency of the dough-temperature which in tern is controlled by the ambient temperature of the room. So how do you calculate quickly the final temperature of your mixed dough?
