Micro-distillery boom in Ontario is on the rise and it is projected to be a huge niche market in the coming years. We will dedicate this space to reviewing all that is to come in the micro-brewery, craft liquor scene. Here is a short list of micro-distillery movement. Top five distilleries in Ontario


Still Waters Distillery

Barry Stein and Barry Bernstein established Ontario’s first micro-distillery, beginning production in March 2009 and are pioneers of the craft-distilling movement in the province.


 

Toronto Distillery Co.

Owners Charles Benoit and Jesse Razaqpur make organic gin, single-grain whisky, beet spirit and Applejack at their certified organic distillery in The Junction.


 

Last Straw Distillery

Owner Don DiMonte in Concord, Ont., making single malt liquor, then age it in ex-Jack Daniels and Heaven Hill Bourbon Barrels.

Ex-engineer Mike Heisz started production July 2015 and has had his retail store open since September in Stratford, Ont.


 

Dillon’s Small Batch Distillers

Distiller Geoff Dillon at Dillon’s Small Batch Distillery in Beamsville, Ont. won a gold medal for its Canadian rye whisky.

Launched in 2012, this distillery makes Canadian rye whisky (for which it won a gold medal at the 2013 San Francisco World Spirits Competition), vodka, gin, white rye and even absinthe.
